Coastal Flavor – Shrimp Newburg

Are there meals from your childhood that bring back certain memories? I think we all have them. Whether it’s your grandmother’s Thanksgiving dressing or the casseroles certain family members brought to each gathering, those smells and tastes are packed with nostalgia! Recently, I was looking through my mama’s recipe box and came across one that did just that. This is the dish my mother always pulled out for adults-only dinner parties or any time she needed an impressive from scratch dish that any local would love. (I always got a taste of this if there were any leftovers from the previous night’s get-together.)

Shrimp Newburg

½ cup Olea
½ cup green onions and tops
1 cup sliced mushrooms
1/3 cup flour
½ tsp salt
2 cups of milk
1 cup grated cheddar cheese
3 tablespoons sherry
1 pound fresh shrimp (headed and peeled)

Melt Oleo
Sauté onions, mushrooms, and shrimp until pink
Add flour and salt
Slowly stir in milk
Cook and stir until thick
Add grated cheese and sherry
Cook and stir on low heat until thick

Serve on French bread or over rice. This amount serves 4.

Simple and easy! Pull out this decadent tasting dish next time you have friends over. You won’t be disappointed!
